With less cut off each Agave plant, the heart of the plant is retained in every batch for the highest possible quality. Cooked in the traditional Mexican method, in volcanic stone ovens over burning Holm Oak everything that is needed for this Mezcal to taste great is done by hand. Even the bottles label is applied by hand.
For every plant that is harvested, an extra 2 are planted to ensure a sustainable option for future batches will always exist.
