Champagne was famously invented by mistake by a French Monk in the 17th Century, named Dom Pierre Perignon. Originally he wanted to get rid of the bubbles that kept appearing in his wine, fortunately for us he never succeeded. From smashing bottles against the bow of Ships on their maiden voyage, to spraying it on a Formula One podium, Champagne has become synonymous with celebration. In recent years, the quality and popularity of many Cavas and in particular Proseccos has increased so much that they are not seen as poor substitutes, but often preferred to their famous French Cousin.
