How To Make A Rhubarb Gin

As the autumn begins to draw in, our attention turns to more seasonal fruits such as the rhubarb. Around this time is the end of the harvesting season, as the rhubarb plant needs time to recover for next year. So now is your last chance to make the most of your rhubarb crop, or to find it in the supermarket. As well as making a delicious rhubarb and custard crumble, you can also add it to your favourite tipple too – gin! 

We recently told you how to make sloe gin on the blog. Rhubarb gin follows a very similar method, and we think you’ll love having a go at this version too. 

Here’s our guide on how to make a rhubarb gin to tell you everything you need to know.

Grab your rhubarb sticks and make sure they are freshly washed. They’ll need to be cut down so that they can fit into your jar. Add them into the jar along with your sugar, and give it a good shake. If you want to add some ginger, then this is an optional step but it will give the finished product a bit of heat. 

Leave the mixture alone for 24 hours. In this time, the juices of the rhubarb will begin to seep into the sugar. When you return the next day, it will have reduced down to a clear liquid with the sticks still remaining. 

Next, grab your gin and fill the container to the top. Seal the jar back up, and give it another shake. For the next 3 weeks, continue to give the container a shake twice a day. Then, simply strain the mixture to remove the rhubarb and any sediment. Your rhubarb gin is then ready to drink!

While most people follow the above traditional recipe, there’s plenty of ways you can customise it. For example, you could add in strawberries to make a rhubarb and strawberry gin liqueur. Alternatively, some makers even add vanilla pods for a touch of refreshing sweetness.

If you prefer a more tart tasting rhubarb gin, then ease up on the sugar at the start. Likewise, if you want a super sweet taste, you can add more sugar or cut back on the amount of rhubarb you add. 

Be sure to store your rhubarb gin in a cool dark place while it’s developing too. When it’s ready, why not bottle some up and give to your friends? We don’t know many people who would say no to some homemade rhubarb gin!
